Spices for Biryani: Biryani Masala Powder – 2 tablespoons Small Cardamom – 7-8 Large Cardamom – 1 Cloves – 7-8 Cinnamon – 1 inch 2 pieces Mace – 1 Bay leaves – 4 Black pepper – 9-10 Cumin powder – 1 teaspoon Flour (optional)
Instructions to make Chicken Biryani: Clean the chicken and marinate it with turmeric, yogurt, and salt for 1 hour. Wash the rice well and soak it in water for 30-40 minutes. Make dough like a chapati with flour and water and keep it aside. Fry 2 large boiled onions in plenty of oil until they turn brown and keep them aside.
It will be required for cooking the biryani on dum. Peel and cut the potatoes into four pieces each, then fry them in the same oil with salt until they turn golden brown, then remove them and keep them aside.

Boil the water and add the soaked rice. Cook the rice until it’s 75% done. Strain the rice and keep it aside.
Preparing the Chicken Gravy: Take a pan and heat 4-5 tablespoons of oil. Add the garlic-ginger paste and sauté it for 1-2 minutes. Then add the chicken and fry it on medium heat for 10-15 minutes until it turns golden brown. Remove the chicken from the pan and keep it aside. In the same oil, add the remaining sliced onions and fry until they turn brown.

Then add the tomato paste and green chili paste, and fry for 2-3 minutes. Add biryani masala powder, 2 bay leaves, 2 small cardamoms, 1 large cardamom, 4-5 cloves, 1-inch cinnamon, and 1 mace. Fry the spices for a minute or two. Then add the fried chicken and mix it with the spices. Add fried potatoes and mix them too. Add fried onions and barista, then add some milk, kewra water, and lemon juice, and mix them well. Cook it on low heat for 10-15 minutes.

Repeat the process until all the rice and chicken gravy are used up. Cover the pot with a lid and put it on very low heat. Keep a tawa under the pot and cook for 20-25 minutes.
