Ingredients for making chicken masala:
- Chicken – 500 grams
- Onion – 2 large (finely chopped)
- Garlic paste – 3 tablespoons
- Tomato puree – from 4 tomatoes
- Vinegar/Lemon juice – 1 tablespoon
- Fried cumin powder – 1 tablespoon
- Cardamom – 5 pieces
- Cloves – 5 pieces
- Peppercorns – 8-10 pieces
- Cumin – 1/2 tablespoon
- Dried chili – 2 pieces
- Coriander powder – 3 tablespoons
- Besan (gram flour) – 2 tablespoons
- Kashmiri chili powder – 1 tablespoon
- Turmeric powder – 1 teaspoon
- Chicken masala – 1 tablespoon
- Green chili – 4 pieces
- Mustard oil
- Salt
- Sugar

Masala Chicken Recipe:Â Â Instructions for making chicken masala:
- Chicken marinade – Wash the chicken well and marinate it with 1 tablespoon of vinegar or lemon juice, 1 tablespoon of garlic paste, fried cumin powder, salt, and a little turmeric for 30 minutes in the refrigerator.
- Before starting to cook, make two types of masala:
i) Garam masala – Fry cardamom, cloves, peppercorns, cumin, and dried chili in a dry pan until fragrant, then grind them into a fine powder.
ii) Gravy masala – Mix coriander powder, gram flour, Kashmiri chili powder, and turmeric powder in a bowl.
- Heat mustard oil in a pan and fry the chopped onion until golden brown.
- Add 2 tablespoons of garlic paste and fry for 1-2 minutes.
- Add the tomato puree, salt, and sugar to the pan and cook until the tomato is fully cooked and the oil separates.
- Add the gravy masala to the pan and fry for 1-2 minutes.
- Add the marinated chicken and fry for 5-7 minutes.
- Add 1 cup of hot water and bring to a boil.
- Add the garam masala and chopped green chili to the pan and mix well.
- Reduce the heat, cover the pan, and cook for 20-25 minutes, or until the chicken is fully cooked and the gravy has thickened.
