Even if you have dishes made with chicken, mutton, or paneer, it feels like you have had them a thousand times before. What if you could find a recipe that is spicy, colorful, and so delicious that you would want to lick your fingers after eating it?

Chicken Masala Gravy is a Punjabi-style dish that can be easily made with common ingredients found in your kitchen. So, whether you suddenly have guests or want to impress someone, you can confidently whip up this dish without any hassle.

Spicy, colorful, and flavorful chicken masala recipe

Ingredients for making chicken masala:

  • Chicken – 500 grams
  • Onion – 2 large (finely chopped)
  • Garlic paste – 3 tablespoons
  • Tomato puree – from 4 tomatoes
  • Vinegar/Lemon juice – 1 tablespoon
  • Fried cumin powder – 1 tablespoon
  • Cardamom – 5 pieces
  • Cloves – 5 pieces
  • Peppercorns – 8-10 pieces
  • Cumin – 1/2 tablespoon
  • Dried chili – 2 pieces
  • Coriander powder – 3 tablespoons
  • Besan (gram flour) – 2 tablespoons
  • Kashmiri chili powder – 1 tablespoon
  • Turmeric powder – 1 teaspoon
  • Chicken masala – 1 tablespoon
  • Green chili – 4 pieces
  • Mustard oil
  • Salt
  • Sugar

Masala Chicken Recipe:   Instructions for making chicken masala:

  1. Chicken marinade – Wash the chicken well and marinate it with 1 tablespoon of vinegar or lemon juice, 1 tablespoon of garlic paste, fried cumin powder, salt, and a little turmeric for 30 minutes in the refrigerator.
  2. Before starting to cook, make two types of masala:

i) Garam masala – Fry cardamom, cloves, peppercorns, cumin, and dried chili in a dry pan until fragrant, then grind them into a fine powder.

ii) Gravy masala – Mix coriander powder, gram flour, Kashmiri chili powder, and turmeric powder in a bowl.

  1. Heat mustard oil in a pan and fry the chopped onion until golden brown.
  2. Add 2 tablespoons of garlic paste and fry for 1-2 minutes.
  3. Add the tomato puree, salt, and sugar to the pan and cook until the tomato is fully cooked and the oil separates.
  4. Add the gravy masala to the pan and fry for 1-2 minutes.
  5. Add the marinated chicken and fry for 5-7 minutes.
  6. Add 1 cup of hot water and bring to a boil.
  7. Add the garam masala and chopped green chili to the pan and mix well.
  8. Reduce the heat, cover the pan, and cook for 20-25 minutes, or until the chicken is fully cooked and the gravy has thickened.
  9. Serve hot with rice or bread. Enjoy your spicy, colorful, and flavorful chicken masala!
